Black cumin [Latin: Nigella sativa], also known as nutmeg flower is a perennial, herbaceous plant and known species of buttercup family. Despite the name "black cumin" the plant is unrelated to the ordinary cumin [Cuminum cyminum] or nature chestnut / black sesame seeds [Bunium bulbocastanum]. The seeds are typically short roasted in a frying pan or baked in the beginning of the cooking process in order to obtain a nutmeg-like flavor. In Indian, Turkish, Persian, Egyptian and Greek cuisine, the seeds are used to decorate breads or ground to give flavor to meat dishes. Black cumin is used since ancient times as a medicine. The plant part that is most widely used are the seeds, especially the oil extracted from these seeds.
