Nitrate salt is vacuum salt with 0.6 % nitrate, and is ideally suited to the meat processing industry. The salt prevents bacteria growth and provides for an attractive colour of the meat. Also the preservation of the meat is lengthened and the meat is less temperature-sensitive.
