Sodium sulphite is a white, unstable powder that reacts with acid substances to form sodium sulphate. In acid conditions sulphuric acid is formed, which in fact has a preserving effect. It is used as a preservative and as a bleaching agent to prevent the decay and discolouration of foodstuffs. In meat it prevents browning, but it may not be used in meat, since it could mask bacterial decay (recognisable by the brown colouring). It is also used in bread making, since it improves the rising and kneading properties.
